I am broadly familiar with several different types of wines, but I would like to have a proper sommellier on staff both to select wines for our menu and to help our customers. However, I have no idea how to go about finding and interviewing a suitable candidate. Any suggestions?

I am planning a blind wine tasting event and would like to find a pre-printed form for approx. 5 different wines.
my guest appreciates better wines and often mentions the cru’s established in 1855. I don’t want to appear ostentatious or patronizing, but a barolo will not do here.
This guest is my client, hence money is no object. The restaurant has one of the finest wine cellars in the US. His views on wine are 100% Gallic; guess the type of restaurant?!! He knows at least as much as I do, even complements my cellar, except for what he calls the riff raff elements (i.e. Non French vintages). He is looking for me to choose and impress him, that’s his game. Think red!
I’m trying to select a wine for the first time and need some help. I’ve been doing a little bit of (mostly unsuccessful) research and I think I have an idea of what I *might* like and need some suggestions.
(1) Dry, Off-dry, Semi-sweet and sweet: I don’t want to feel overpowered by alcohol, it always seems to come out like Listerine to me. I also don’t want something too sweet, like I’m having kool-aid. I believe I may be looking for an off-dry or semi-sweet wine.
(2) Soft, Crisp, Tangy: Crisp or Tangy
(3) Raspberry! I love all things raspberry, and I want a strong raspberry flavor in my wine. I’ve also seen that some wines have a tea-like taste and if I could find a wine with the raspberry flavor and tea flavor it would be wonderful.
(4) Light, Medium or Full Bodied: As it was explained to me, a light wine would be like skim milk, a medium like 2% milk and Full like regular full fat milk. I’d really prefer a light wine, but would also try a medium body.
(5) I have no preference for color or food pairings
I don’t drink very frequently, so I am quite the novice when it comes to selecting wines.
Anyhow, I plan to pick up some wine today and I need some recommendations. I want to pick up 1 bottle of red wine and 1 bottle of white wine.
I prefer wine that is moderately sweet, but I dislike wine that is extremely sweet. For example, on a scale of 1-10, with 1 being extremely dry and 10 being extremely sweet, I want to get something that is about a 6 or 7.
Also, what does sake taste like?

I believe it’s at the very beginning of an episode: Niles is telling Frasier about a practical joke he played on a fellow wine club member: "I switched his [fancy-pants wine name] for a [almost but not quite identical fancy-pants wine name]", and both of them laughed hysterically.
